反式脂肪酸（Trans fatty acids，TFA）有天然存在和人工制造两种情况。人工反式脂肪是植物油经过部份氢化处理过程中产生的，方法是在少量的镍、钯、铂或钴等触媒金属的帮助下，将氢加入植物油里产生氢化反应。日常生活中，含有反式脂肪酸的食品很多，诸如蛋糕、糕点、饼干、面包、印度抛饼、沙拉酱、炸薯条、炸薯片、爆米花、巧克力、冰淇淋、蛋黄派……凡是松软香甜，口味独特的含油(植物奶油、人造黄油等)食品，都含有反式脂肪酸。有资料表明过量摄入反式脂肪酸可增加患心血管疾病，如粥样动脉硬化的风险，所以，注重健康，少使用含有反式脂肪酸的食物。
