β-葡聚糖作用方式不同，可分为内切型和外切型。前者存在于谷物种子、某些真菌和某些细菌中，能催化水解谷物细胞壁中的β-葡聚糖，其中包括内切型β-1,4-葡聚糖酶、内切型β-1,3-葡聚糖酶。后者存在于谷物种子中，其中又包括外切型β-1,4-葡聚糖酶、外切型β-1,3-葡聚糖酶。
